The Palazzo Previtera Cellar holds a unique selection of natural wines, a pure expression of the volcanic territory and its ancestral energies.
Our cellar is a journey through historic districts, native grape varieties, and essential winemaking practices that respect the land's identity without forcing its rhythms.
Etna's Natural Wines are the core of our selection. Sourced from small independent producers, these wines tell the story of the minerality of lava soils, the altitude of bush-trained terraces, the sea breezes, and the temperature difference between day and night.

Labels such as Frank Cornelissen, with his intense and visceral reds, Vino di Anna, who works with Georgian qvevri and microvinifications by contrada on Etna, and Controcorrente, a young winery from Linguaglossa that produces free and vibrant wines, are living examples of a respectful and radical approach. Each wine bottle tells a story to share with our guests.



The collection is completed by the Calabrian wines from Racina Wines, Kalma Wines from Chiaramonte Gulfi, companies that enhance the biodiversity of southern Italy. Our winery promotes small natural winemakers in still little-explored territories. Their wines are genuine, raw, Mediterranean — an authentic expression of a deep south that resonates in every glass.
Next to Etna, the winery hosts a curated selection of French natural wines by Pierre Jancou, a leading figure in the world of living wines in Europe: bottles from artisan winemakers of the Loire, Jura, and Languedoc, capable of sincerely expressing their own terroir. The philosophy is the same: spontaneous fermentations, no clarification or filtration, minimal intervention in the vineyard and in the cellar.
